I've never used Steam before. Do you need to be online to access their servers to play things you download, or can you play without the need of the Steam service after your download is complete?

The individual games look after there servers, Steam is only really a digital sales service, though they do have a lot of game servers as well, I have never played a game through the steam game browser thingy. You do have to have steam running to play most of the games you buy through the service, but that's no problemas it's pretty resource light these days. So long as you turn off the steam in game Community overlay(it messes with a few games, most notably Bad Company 2). ALSO it can be good as it cut's down on hackers (they can get their entire games account banned).
Also what I like is it keeps all your games in one place, so if you need to reformat you can either DL a fresh copy or steam has a backup facility. The beauty of that for me is my ISP provides free downloads through steam, SO I don't even have to backup anything I buy through them.
The new EA games Origin Digital service is much more of a worry. It is much more invasive and you have to sign over your life as part of their TOS(or whatever they call it now). Problem is it's needed to play Battlefield 3, so pretty much the whole world will be signing their lives over to EA shortly, myself included, lol.
